Our client Durbar Café and Restaurant is seeking a full-time Chef de Partie to join their team.

Tasks required include:

• Prepare, cook, season, and present high-quality dishes within the assigned kitchen section in accordance with menu specifications and recipes.
• Assist in the planning and development of menus, including contributing ideas for seasonal dishes and specials.
• Prepare meal ingredients including washing, peeling, cutting, marinating, and portioning vegetables, fruits, poultry, seafood, and meats.
• Ensure all food is prepared and presented consistently to the highest standards of quality and presentation.
• Monitor portion control and minimise food wastage to maintain cost efficiency.
• Supervise and coordinate kitchen staff working within the assigned section and provide guidance where required.
• Ensure all kitchen workstations, equipment, and food preparation areas are clean, sanitised, and maintained in accordance with food safety and hygiene regulations.
• Monitor stock levels and assist with ordering, receiving, and storing kitchen supplies and ingredients.
• Ensure all operating equipment is in safe working condition and report maintenance, repair, or safety issues to management promptly.
• Follow workplace health and safety procedures, including safe manual handling techniques and the proper use of protective clothing and equipment.
• Comply with all company policies and procedures relating to food safety, hygiene, grooming, conduct, emergency procedures, and workplace standards.
• Maintain procedures to minimise environmental impact and reduce kitchen waste wherever possible.
• Demonstrate a strong commitment to customer satisfaction through excellent food quality, consistency, and service standards.
• Assist in training junior kitchen staff, apprentices, and kitchen hands as required.
• Work collaboratively with the kitchen team to ensure smooth and efficient kitchen operations during service periods.
• Ensure the workplace remains free from discrimination, harassment, and victimisation, contributing to a positive and inclusive work environment.

Key Selection Criteria:

• Demonstrate an ability to understand and enforce appropriate Legislation in regard to the health requirements of the local council
• Demonstrate an ability to maintain accurate records in all kitchen reporting
• Demonstrate an ability to communicate with staff, provide leadership and to promote a team environment

Requirements:

• Associate degree, Advanced Diploma or Diploma in relevant field
• At least three (3) years of relevant experience may substitute for the formal qualifications listed
• Certificate III and IV in Commercial Cookery
• At least three (3) years of relevant experience as a Chef or equivalent role
• Prior experience preparing Indian and Asian cuisine would be highly regarded
• Knowledge and understanding of running a kitchen in the absence of the Head Chef and Sous Chef
• Excellent communication, teamwork, and organisational skills.
• Ability to work efficiently in a fast-paced hospitality environment.
