Our client is seeking a Baker to join their team in Croydon South, Victoria.

The Baker is responsible for the hands-on production of the company’s bread and bakery products to a consistent commercial standard. Working from the company’s recipes and production schedule, the Baker prepares, proves and bakes doughs, operates bakery machinery, and ensures that every batch meets the company’s quality, food safety and allergen-control requirements before it is packed and dispatched to customers.

Key Duties and Responsibilities:

• Check the cleanliness and safe working order of mixers, dividers, moulders, provers, ovens and other bakery equipment before each production run.
• Check the quality of flours, grains, seeds and other raw materials, and weigh and measure ingredients accurately to recipe and batch specifications.
• Mix, knead, mature, divide, mould and shape doughs for the company’s range of bread and bakery products.
• Control fermentation and proving, adjusting time, temperature and humidity to suit each dough and the day’s conditions.
• Set and monitor oven temperatures and product appearance to determine baking times and achieve consistent crust, colour and texture.
• Coordinate the forming, loading, baking, unloading, de-panning and cooling of batches so that daily production and dispatch schedules are met.
• Operate and adjust dough rolling, moulding, dividing and slicing machinery.
• Finish products as required, including seeding, topping and glazing, and check finished goods against weight, size and quality specifications before packing.
• Follow the company’s food safety program (HACCP), including allergen segregation, cleaning and sanitation schedules, temperature checks and batch/production records.
• Empty, clean and grease baking trays, tins and equipment, and keep the production area clean and orderly.
• Monitor ingredient stock levels, rotate stock and report ordering requirements, equipment faults and quality issues to the Director.
• Assist with trialling and refining recipes and new product lines.
• Guide and train bakery assistants and junior staff in correct baking methods, hygiene and safe work practices.
• Comply with occupational health and safety requirements, including safe manual handling and the safe use of hot surfaces and machinery.

Requirements:

• Certificate III in Baking (or a comparable trade qualification in bread baking)
• A minimum of 12 years of relevant experience as a Baker
• Demonstrated experience in commercial or production bread baking, including dough preparation, proving and oven work.
• Sound knowledge of food safety, hygiene and allergen management in a food manufacturing environment.
• Ability to operate commercial bakery machinery safely and to carry out basic adjustments.
• Reliable, punctual and able to work early-morning, night or rotating shifts as production requires.
• Physically able to stand for extended periods and carry out repetitive lifting and manual handling.
• Good communication skills and the ability to work both independently and as part of a small production team.
