Our client N&B Ventures Pty Ltd, trading as Charle’s Bake House, is an Australian bakery business owned and operated by partners Rajwinder Kaur and Harpreet Singh. The business produces and sells a range of freshly baked goods, including breads, rolls, cakes, pastries, and other bakery products, servicing both retail walk-in customers and wholesale/local orders. The consistent quality and freshness of its product range is central to the business’s reputation and continued growth, and the business requires a qualified and experienced Baker to sustain daily production output and product standards.

The Baker is responsible for the preparation and production of the full range of bread and bakery products offered by Charle’s Bake House. The position requires the application of trade-level skills in dough preparation, fermentation, shaping, proofing, and baking, together with responsibility for production planning, quality control, stock management of ingredients, and compliance with food safety and hygiene standards. The Baker works with a high degree of autonomy in the day-to-day operation of the bakehouse and exercises independent judgement in relation to recipes, production volumes, and product quality.

Key Duties and Responsibilities:

• Checking the cleanliness and operation of ovens, mixers, provers, and other baking equipment prior to commencing production each day.
• Checking the quality of raw ingredients, including flour, yeast, and other materials, and weighing and measuring ingredients according to recipes and production requirements.
• Kneading, maturing, cutting, moulding, mixing, and shaping dough and pastry goods by hand and using commercial mixing and dividing equipment.
• Preparing and controlling fermentation and proofing of doughs, adjusting times and temperatures to account for ingredient variation and ambient conditions.
• Preparing pastry fillings, glazes, and coatings for sweet and savoury bakery lines.
• Monitoring oven temperatures, baking times, and product appearance to ensure consistency and quality of finished goods.
• Coordinating the loading, baking, unloading, de-panning, and cooling of batches of bread, rolls, and other bakery products.
• Glazing, icing, and finishing baked goods for display and sale.
• Planning daily and weekly production schedules to meet retail demand, standing orders, and seasonal or special-occasion requirements.
• Ordering ingredients and supplies, monitoring stock levels, and ensuring correct storage and rotation of raw materials and finished products.
• Maintaining strict compliance with food safety, hygiene, and workplace health and safety requirements, including cleaning and sanitising of work areas and equipment.
• Assisting with the training and supervision of kitchen hands and junior staff assisting in the bakehouse.
• Minimising wastage and monitoring production costs to support the profitability of the business.

Requirements:

• Certificate III in Baking (or equivalent trade qualification)
• At least 12 months experience as a Baker
• Demonstrated experience in commercial bread and bakery production, including sound knowledge of dough handling, fermentation, and baking techniques.
• Knowledge of food safety and hygiene standards applicable to a commercial bakery environment.
• Ability to work early morning shifts and manage time effectively to meet daily production deadlines.
• Attention to detail and a consistent commitment to product quality and presentation.
• Ability to work both autonomously and as part of a small team.

Working Conditions

The position is full-time and based at the business premises of Charle’s Bake House. The role involves early morning starts consistent with bakery production requirements, standing for extended periods, and the manual handling of ingredients, trays, and baked products. All employment terms and conditions, including salary, leave, and superannuation entitlements, are no less favourable than those provided under the applicable modern award and the National Employment Standards.
